  • 2 potatoes, peeled and cubed

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the onions and garlic to the skillet and cook for about 5 minutes, stirring occasionally.
  3. Add the cumin, achiote paste, cilantro, white wine, chicken broth, salt, and pepper to the skillet and cook for an additional 5 minutes.
  4. Add the chicken to the skillet and cook for about 10 minutes.
  5. Add the tomatoes to the skillet and cook for an additional 10 minutes.
  6. Add the potatoes to the skillet and cook for an additional 10 minutes.
  7. Serve the Pollo al Mani Peruano with boiled potatoes and enjoy!
