Ingredients

  • 2 large boneless and skinless chicken breasts
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 whole-wheat pita breads
  • 1/2 cup plain Greek yogurt
  • 1/2 cup cucumber, peeled, seeded, and diced
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup kalamata olives, chopped

Instructions

  1. In a large bowl, combine the chicken, lemon juice, olive oil, garlic, oregano, paprika, salt, and pepper. Marinate the chicken for at least 30 minutes, or up to 8 hours.
  2. Preheat a grill or grill pan to medium-high heat. Grill the chicken for 3 to 4 minutes per side, or until cooked through.
  3. Warm the pita breads on the grill for 1 to 2 minutes per side.
  4. In a small bowl, combine the yogurt, cucumber, dill, and olives. Spread the yogurt mixture on the pita breads.
  5. Slice the chicken and divide among the pitas. Serve immediately.
